Xylitol and stevia are fine, but if you don’t like the taste of stevia, or if xylitol is causing you gastrointestinal distress, then there is another solution – a natural sweetener that is actually beneficial to your gut flora, and therefore combats candida.
Yacon Syrup is relatively new on the market, although it’s been around a while in South America. It is derived from a tubular plant, and tastes like molasses.
Yacon syrup is glucose free and the sugar is composed mainly of fructooligosaccharides ( FOS) that cannot be absorbed by the body. FOS is a prebiotic that helps your digestion and the intestines to eliminate waste products. It strengthens and activates the good bacilli like L acidophilus and B bifidum which in turn helps enhance the immune system and helps suppress putrefactive pathogens such as Candida albicans. The remaining sugars that are not FOS are absorbed slowly into the blood stream, making yacon syrup very low glycemic.
Coconut oil is a potent Candida killer. It contains Lauric acid, Capric acid and Caprylic acid, which help prevent Candida overgrowth and strengthen your immune system.
A study done at the University of Iceland showed that capric acid "causes the fastest and most effective killing of all three strains of Candida albicans tested, leaving the cytoplasm disorganized and shrunken because of a disrupted or disintegrated plasma membrane."
Another study was done at the Department of Medical Microbiology & Parasitology, University College Hospital in Nigeria concluded: "It is noteworthy that coconut oil was active against species of Candida at 100% concentration compared to fluconazole. Coconut oil should be used in the treatment of fungal infections in view of emerging drug-resistant Candida species."
A third study done in 2010 at Ghent University in Belgium found that the medium fatty acids in coconut oil killed the yeast Candida bombicola.
Unlike other nuts, almonds are an excellent source of alkaline protein AND research shows that they also promote beneficial bacteria in the gut. According to a study published in "Applied and Enviromental Microbiology", finely ground almonds significantly increased the levels of certain beneficial gut flora.
The hardest thing for me about the Candida diet is going without bread. These muffins solve that problem! Pop them in the toaster for breakfast!
